Yep, you’re right about the compiling part. What I light on fire to capture the flames usually depends on the photo.

For my latest photo (http://www.flickr.com/photos/alex-stoddard/6637737767/in/photostream/), I had a wig that was very similar to the model’s natural hair in both color and length, so we simply lit that on fire and put it in generally the same area that the model’s head was. Photo below:
